Like a true Italian mama (yup, both sets of my Grandparents were from the Old Country…I’m 100% Italiano!) I make my own spaghetti sauce from scratch. I use my mom’s recipe which she got from her mom, my cute Sicilian Grandma Cannizzaro. I start in the morning and let it simmer all day in my Nesco Roaster, drawing rich flavors from the roasted meatballs, sausage and short ribs. But sometimes, when I’m in the mood for my kind of comfort food and I don’t have time for the all day process, I prepare an easy and yummy pasta dish, I call Hillbilly Spaghetti Pie, using my favorite cooking pan…my cast iron skillet.
I actually started using this kind of pan a couple of years ago when I moved to the Ozarks. Up until then, I only used the non-stick kind. But after watching several episodes of Cooking With (the ever adorable) Paula Deen, and hearing her rave about the glories of cooking with cast iron, I decided to give it a try.
So I headed on down to Bass Pro and brought one home. It was already seasoned, so I got busy cookin’ up all kinds of “vittles” (that’s what Granny on the Beverly Hillbillies called food y’all…she also loved her black fryin’ pan! ). By the way, the truck that the Clampetts drove in the Beverly Hillbillies show is on display right here in my town, at The College Of The Ozarks! The Clampetts were from these here parts.
Getting back to my skillet story… once I started cooking up tacos, grilled sandwiches, grilled garlic zucchini, corn bread, Italian-Breaded chicken breasts and searing roasts until they were crusty brown and ready for the oven to roast…. let me tell you I was sold! Everything tasted so much better! I went out and got another one. Now both of them sit on my stove top permanently, ready to get cookin’ at a moments notice.
I feel so farm-girl-ish when I’m cooking with my country skillets! If you want to give cast iron cooking a try, keep in mind, it’s not a pan that can go in the dishwasher. This kind of skillet has been around since the 1700’s, and so you need to care of it the Old Fashioned, down-on-the-farm way! Here are a couple of tips for taking care of your iron pans:
- Get a pan that has already been seasoned (baked with oil on it). Also, the one I use is made by Lodge and has two handles-one short and one long- so it’s easier to carry, since it is so heavy. I own the 13 1/4 ” and the 12″. I found the one-size- fits-all lid at The Kitchen Store.
- When you have finished cooking just wipe the skillet out with paper towels. Never put it in a sink full of water.
- Once you wipe it clean, spray or drizzle oil and rub it in. Now you’re good to go again!
- If food has stuck to the bottom, pour 1 cup of water in the pan and put the heat on low, once it starts to simmer, take a coated spatula and scrape the bottom until all the bits are loosened. Turn off the heat, let it cool a bit, then pour out the water and wipe out any food residue with paper towels. Dry completely. Rub oil in.
- Resist the urge to scrub it clean with lots of soap and water! I know it’s hard, but the oils need to be protected for the pan to do it’s job!
- Careful the handle will get hot!
My Hillbilly Spaghetti Pie has all of the flavor of a rich Italian dish, mainly because it is prepared with fresh ingredients, but it’s made in half the time. My pan size is 13 1/4 inches in diameter.
It’s the kind of hot meal that warms the tummy on a cold winter’s day. So come on inside my kitchen and I’ll show you how I make it…..
Start with a clean kitchen.Tie your cute apron on and fill the sink with hot soapy water. This is so you can clean as you go, so you don’t end up with a kitchen that looks like an earthquake hit it….I speak from experience! When you are done with something, rinse it, then drop it in the suds. Get your emptied trash can ready, so your throw-away stuff is not laying all over the counter taking up space and becoming a distraction. Gather all of your ingredients and have them chopped, measured and ready to go before you begin. It is so much more enjoyable when everything is pre-measured and ready to dump in the pan like they do on all the cooking shows!
Hillbilly Spaghetti Pie
1 bunch green onions, chopped
2 tablespoons olive oil
1/2 pound extra lean ground beef
1/2 pound Italian sausage, 4 links (sweet or hot) casings removed
4 garlic cloves, minced
3 tablespoons minced fresh parsley
1 (28 ounce) can crushed tomatoes
1/4 teaspoon red pepper flakes (I add two more pinches to give it a kick!)
1/4 teaspoon dried oregano
1 teaspoon salt (or to taste)
2 cups water
8 ounces spaghetti, broken into 3 inch pieces (I used half of a 16 ounce package–Thin spaghetti–not Angel Hair– but you can use regular )
1/4 cup heavy whipping cream
4 tablespoons chopped fresh basil
1/2 cup fresh grated Parmesan cheese
2 cups grated mozzarella cheese
- Saute green onion in 2 tablespoons olive oil, on medium heat 5 minutes.
- Add beef and sausage, brown over medium-hi heat.
- While almost brown, add garlic, pepper flakes, oregano, and parsley.
- Once browned, stir in crushed tomatoes, water and salt.
- Add broken spaghetti. Push spaghetti into liquid, and cover for 8 minutes.
- After 8 minutes, stir pasta so the noodles won’t stick together. Reduce heat to medium low simmer for 6 more minutes until pasta is al dente (almost cooked but still a little firm).
- Add basil, Parmesan cheese, and cream, stir well.
- Sprinkle top with mozzarella cheese, put in oven to broil until spotty brown. (stand there and keep watch or set a timer for 3 minutes at a time until it’s ready, or else you may end up with Blackened Hillbilly Spaghetti Pie!)
Get everything ready!
Add tomatoes, salt and spices…
Top with Mozzarella cheese, broil in oven a few minutes…keep an eye on it so it won’t turn into Blackened Hillbilly Spaghetti Pie! Set your timer a few minutes at a time. Keep checking!
When it is spotty brown (looks like the top of a pizza) it is ready to serve right away.
Makes the best leftovers!!!
For the garlic bread, I just mix melted butter and grated Parmesean cheese with a pinch or two of garlic salt and spread it on the sliced french bread with a spoon, then broil the top until golden.

I have always had to work, I have two sons that are almost 20 and almost 18. One is away at college and one will be leaving in just a few short months. I hate being at work when I think i am missing out on time with him. Once he leaves things will never be the same. In fact today, I was really feeling sorry for myself.
Your blog reminds me to make the most of the time I do have with him. We try to always have dinner together as a family, play the wii together, special breakfasts on the weekends.

hello RuthAnn, I’ve been reading your blog and its been a blessing and an inspiration for me, I really love all of your advices and your recipes especially those pie recipes. Just would like to ask you for an advise I really don’t have someone to open up to but I really need some advise, well I am turning 32 yrs old, I had my first son when I was 16 and I am still struggling with this parenting thing especially now that my first son just turned 15 yrs old, he’s not the type that goes out in the street and be with friends, he’s always home and when my husband and I have to run errands we bring our boys along, well I’ve had bad experiences when I was just a little girl and my mom would leave me with my grandpa so now I really cannot leave my boys in her care, she lives with my other two siblings but they r in such a bad shape I cannot leave them there with them, but my real issue is that my son complains that I don’t give him freedom, he wants to go out to his friends house and chilled out there till he wants to come home, and now he wants a girlfriend he keeps asking me if its okay, I really don’t know what to say or how to deal with this, I’ve tried to let him go to one of his friends house, because I know his mom, but he wants to go everyday and just go out and do what he wants, I have my siblings that did what they wanted and now they r in drugs and my mom is broken hearted and to top it off, my sister is moving out which is fine cause she is an adult but she has drug and alcohol issues, well she is saying that she is moving out cause my mom never gave her privacy and things like that which are not true. So I really don’t know what to do and how to answer to my son about the girlfriend thing and the freedom thing which for him is being at someone else house and doing I don’t know what, if you can please just say anything what God puts in your heart, I will greatly appreciate your advice. thank you.

Just a note: back when I suffered with anemia I was told that any tomato product cooked in an iron skillet leached the extra iron from the skillet, so that may just be an added health benefit if you will.

Ruthann, FYI, from someone who is a hillbilly girl from the Ozarks, you do NOT wash the pan - ever! Not even in the sink. No sirree, Bob. You take the spatula and scrape and then you simply wipe it down with a cloth. That’s all.
I know that sounds bad, but they really do come clean, plus you’ll find the food tastes better the longer you have it.

Great post! I just wanted to tell you how I clean my cast iron pans. I just put about three or four rolled up paper towels in the grease and let it all soak up, then I take clean ones and wipe it all away. I also have heard you are not supposed to wash cast-iron. (The pre-seasoned ones might be different from the other ones that Lodge makes.)Then I just wipe a little grease on it and store it in my oven. You ought to buy a cast-iron Dutch Oven. Your blog is such a happy place to visit. I always love your mix of photographs with vintage prints. I just had to chuckle when I saw you even have a vintage Italian mama print. When I was growing up we had a lot of Italian families for neighbors. I just loved to be invited to their parties and weddings. Talk about big, happy families with lots of delicious food. Your spaghetti pie looks fabulous and I so enjoyed seeing how you make it in your cast iron skillet. I am so curious to know if you have always had such a cheerful outlook on life? Hi, Neighbor!! I live "up the road from you" in mid-south Missouri (Miz-zur-ah?) near Ft. Leonard Wood…my PIL live in Branson. I have lived here 7 years now - and really don't appreciate the Ozarks like you do! (I have *sat* in that Clampett car at Work U - and had my pic takens!) But you open my eyes to this area that I kind of take for granted (I am a Tennessee girl and actually, this area reminds me of HOME but it's still not HOME). I am also converting to cast iron. I have several smaller size skillets and one larger chicken fryer I just picked up that happens to be a Paula Deen pan. We have made several wonderful meals in the chicken fryer besides~~fried chicken. But I will tell you, that was some of The Best fried chicken I have ever had. Nice meeting, I love your posts!

RuthAnn - this recipe looks terrific - and just as soon as I can eat again, I’ll be putting it on the menu rotatation. January is ‘try new recipes’ month here and if my family likes theme we call them ‘A Keeper!’ and make them regularly. I am getting over an illness that has left my mouth and throat too raw for anything tasty, but soon we’ll be trying this! I too love my old cast iron skillets - they were terribly neglected when I inherited them, but now they glow and really work wonderfully. Your blog is always such an inspiration!

I just love your posts…you are such an inspiration. This dish sounds alot like my baked spagetti and cheese bread that is one of my families favorites. I agree with you that kids need their moms at home. Although I have to work I have made sure that my job works around my family not the other way around. I am fortunate to have a very flexible job that I can do mostly from home and when I have to travel my family usually comes with me…like a mini vacation.
Growing up southern, a cast iron skillet, was the frying pan! It was always used for cornbread too!

Talking about iron skillets…that’s a staple in a southern kitchen…I remember my Mama would take her iron skillets outside in the fall when leaves were raked up and burned, and place them in the middle to burn off any residue on the outside…
We are remodeling…combining our den and sun porch into one large family room….oh, the mess….

Well Hey there RuthAnn, boy do you know how to make my mouth water!..yummo! as Rachel would say…We lived in Italy for 3 years and our 1st year was spent with a naplitano family and we were their first americans to live with them (in an apt above them) about 2000 square feet..it was huge..they had us down for dinner almost daily then we would do festas, and sundays…oh sundays were like thanksgiving day…we had to lie down undo our pant buttons and take a nap..they were wonderful cooks and it seemed we did pasta about 4-5 nights aweek..hey we lived in the land of pasta..gained alot of weight living there..and oh the mozzerella Di Buffalo was to die for..only in Naples can you get that..otherwise it was old and icky..and not once did I ever hear thats Amore by Dean Martin..that song was what I thought Italy was all about…very romantized..would love to visit it again..but living there was difficult as it was a tottally different culture then ours and I while I knew alot of words..I never did grasp the lanuage…the food was the best part of being there and the folks we met were warm and friendly.. have you had a chance to visit Italy and where your grandparents come from? thank you for the wonderful recipe..I just need to get a few ingredients and oh a new cast iron skillet…thanks to for the cleaning tips..:)

I just love how this post ended, because I was a SAHM for almost 8 years, but I was also very involved in my childrens school, I love to volunteer it led to me now working with them at their school. my kids love it and I feel I have the best of both worlds I go in with them and come home with them and better yet I get vacation when they do! plus I get paid while on vacation! but soon by choice I will become a SAHM again and I’m happy either way, I’m glad you get to SAH isnt it great!

I don’t know how hard it will be to not have the urge to wash it though. Wiping it down and oiling it back up just seems wrong to me. I would feel like it would need a good scrubbin’!

About 2 weeks ago I was in our local kitchen store. I spied the cast iron pans and was seriously thinking of buying one. I didn’t but it’s been on my mind ever since. Your post has convinced me to take the plunge. I can remember my Mom cooking in one. Everything DID taste better.
The Spaghetti pie recipe looks delish! Add me to the list of people that want your sauce recipe. My Mom made a great one but I never got it from her and I can’t seem to tweak my to be as good.
Love the words of wisdom on staying home with the kids! I’ve been home for almost 16 years now. In the last few years I’ve really come to appreciate what a gift I was given and how positivily it has effected my children and husband. I am so thankful to my husband for making the sacrifices he has in order for me to be able to do this. He has never once made me feel guilty or gave me any impression that we were suffering because we didn’t have two incomes. He’s my Hot Italian Hunk and I love him sooooo… LOL

Oddly enough, my mother still uses her grandmother’s cast iron pan…and it gets washed every time. It wasn’t preseasoned, in fast, my great grandfather made it himself.
When I moved out I bought my own set of 3 preseasoned cast irons, washed them, and they rusted! Your post inspired me to research how to save them. I found a site on how to remove rust and reseason them, so hopefully I can bring them back into use. I’m just wondering if maybe the 50 years of prior use protected my mother’s against 20 years of washing.
What a great post. Found you thru The Vintage Housewife(a cute, cute blog) and I’m so glad I did, I’ll be trying this recipe out real soon. I didn’t realize iron skillets weren’t used by everybody. Here in Texas, we give them as wedding gifts. I am lucky enough to have my daddy’s and my grandmother’s all ready to go. I make everything in them from cornbread to meatloaf. And there is nothing better than Pet milk gravy made in one of those bad boys. My daddy seasoned his by oiling it and putting it in the BBQ pit fire for hours!!! My grandmother would put hers out in the sun to bake off any residue that wouldn’t come off. Kind of gross, but it worked. Get you a cast iron corn stick pan. Those are fun. Thanks for sharing! Funny story… I grew up with my mother cooking in a “black skillet” I knew when I got married, I wanted one of those so I set out to shop for one… all I saw were the “grey” ones. I was so disappointed until someone brought it to my attention that in those days (before pre seasoned pans) I had to do the seasoning…
My husband and I are the proud owners to several skillets and many many Dutch Ovens (that’s what you need next if you don’t already have one) They are great to take camping or cooking at home. You can stack them if you’re outside and cook an entire meal in them including pies!!!

We make our spaghetti sauce from scratch also. All day simmering. The smell is the best smell after a long day. You just know that dinner is going to be good.

This sounds delightful on a cold winter night. I have my grandma’s cast iron skillet. It is probably 80 years old and very well seasoned. I treasure it and use it almost everyday. Mimi
Well, when I make spaghetti pie, you can actually cut it like a pie. I put all the ingredients in a deep pie pan, and it’s just incredible. By the way, cooking in cast iron is not healthly, too much iron ages you.

Yesterday I did it. I went out and bought the pan. A Lodge, like yours. So far I’ve made Grilled Cheese Sandwiches and Pancakes. The flavour is soooo yummy! I’m so glad that I did it.
One thing I forgot though… the handle of the pan is not coated with the stuff that prevents it from getting hot.
Guess who (me!) grabbed the handle while it was still too hot!! Ouch… lol. A painful lesson. Live and learn though, right? Hehe.

Oh boy, last night we had Hillbilly Spagetti Pie…was it ever delicious and fun to make. Made it for my hubby and I. He loved it…we are definitely Indiana Hillbillies! It made a huge amount for two people…we moved it into a casserole in refrid..and my hubby said he will eat it at least two more times…leftovers are better than first day. Can’t wait until kiddos and grandkids come for a weekend. Definitely feeds an army and easy to make once you prepare all ingredients first. Also made the garlic bread. Thanks again Ruthann! My new favorite spagetti.

Diane: Regarding too much iron contributing to aging - there is no medical evidence citing this. In fact, most women are iron deficient and cooking in cast iron contributes to health. Made this over the weekend - it was terrific!

I hope everyone goes out and gets some, they are the best!! I adore doing maple bacon in them too, it gives it the best flavor! :)

I was just perusing some other messages of yours and love your blog! What a gorgeous family you have, also.
My question is that I have hunted for various different pictures for my blog. I love the early to mid 1900s as well as the 1800s, pioneers, Victoria, etc. My problem is that I don’t want to infringe on anyone’s copyrights by copying their pictures or at least giving credit (they don’t always tell the originator). Do you have any thoughts on this, as I see that you have a myriad of fun pix!

What can I say? Another great post! I’ve printed out your Hillbilly Spaghetti Pie recipe and this New Englander (with a touch of Italian in my veins as well) can’t wait to try it! This recipe was awesome. Made it over a week ago and my family is still talking about it. Definitely a keeper. I don’t have a cast iron skillet big enough so I made it in a stainless pan and it worked great. All this talk about not washing the skillets–my mom always washed hers, but afterwards she put them on the stove and turned on the burner until they were completely dry. 40+ years later and the pans are still going strong.

Oh, yes, simmering spaghetti sauce all day long is an Italian cooking secret.. as I am half Italian and that is how I make my sauce.
I am going to have to get my cast iron skillet out of the back of my cupboard !.. Haven’t used it since I moved back here from living in Georgia quite a few years ago. I used to make southern fried chicken and cornbread with it !

I made it last night, and it was awesome! I used Italian stewed tomatoes so adjusted the spices to reflect. I accidently bought a different cheese instead of Parmesean, so, I just used mozzarella all the way around. The sausage that was available at the store was a bulk Italian sausage. The Hillbilly Spaghetti Pie was delicious! I had to substitute veggie ground “beef” for the beef and sausage because my husband is a vegetarian, but it was still incredible. The cream and cheese added so much richness that I didn’t miss the meat. I am definitely going to make this again!

Thanks for that spaghetti pie recipe. I do have a question… I’ve always heard that one should never put acidic foods into cast iron and as i’ve cooked with cast iron pans my whole life, i never have used tomato products in my pans. i was surprised to see you used tomatoes in your cast iron. and the pan is ok?
i am so glad i found you and will be checking in regularly. i want to see the recipe for that buttermilk pie. i’ve never heard of it!

I can’t thank you enough for sharing your recipe, “Hillbilly Spaghetti.” I made it last night and it was wonderful. Not only was it easy to make, it was also amazingly delicious! My husband and daughter loved it as well. My husband and I have been making a conscience effort with trying to make dinner at home and staying away from drive through. Wanted to let ya know I made this for dinner tonight. I made a few changes though. I made it with 1 pound of hamburger & 4 Apple Chicken Sausage links (casing removed). I also added a tablespoon of ricotta on top before serving. It was a HUGE hit with my family. THANK you so much for such a tasty recipe. It gave me an excuse to pull out my cast iron skillet.

I am in love with your site and your recipes. This reminds me of my small town back in the bottom of Texas. My mom always cooked on cast iron pans. I have used nonstick in the past 25 years since I have been married. Funny how I was thinking about converting back to cast iron and I found this blog.

Diane, as a Jewish “farmgirl” at heart I have to say that this was an absolutely delicious “nosh”! I did use ground turkey and turkey sausage for kosher reasons but this was so good! It was a lovely autumn evening last night and this was just what my family ordered. My seven year old came in from playing outside and said “yummmm, what smells so good” I think this will rank right up there with our favorite dish’s ( Mom’s Matzho Ball soup) !! Love your website, I found it inspirational and comforting. Next time your out here Seattle, look me up! ;)
